People in Finton Hollow work at any number of jobs you might find in a small city. There are shopkeepers, office workers, policemen (Carrick Guards), fisherman, farmers, taxi drivers, waitresses, etc.
You can decide what your character does for work, but bear in mind that there is no gender equality in Magical Ireland. While women are allowed to work in some areas, they are barred from others. You'd rarely see any female Carrick Guard in any position of authority. They are mostly the assigned to parking ticket and traffic duties. A few women have come up the ranks (mostly because of family connections), but they are vacated of their posts the moment they marry.
Women hold mostly support positions in any offices. They are secretaries, waitresses, store clerks, and teachers. Some work their family farms, but they are not seen on fishing boats (where they are considered bad luck) Those who open their own business fair better as far as work environment. Married women are often discouraged from working outside the home. Many feel they cannot do a proper job of managing a home and family if they work.
Women will buck up against this, but they will face the town's gossip and general criticism for it.
It's okay to be creative in your choice of work, but make it fit with the town. If it is too far-fetched, the Story Managers will have to step in and ask you to change what you are doing.
You do have freedom to say you own a shop or have a small farm or fishing business. You can work at the An Taoisigh (but check with a Story Manager regarding what job you are wanting to do). You can also teach or do other work at Whispers Academy (again, just check in with the Story Manager). You can be into illegal business as well, but know that you can be caught.
